Lost Passphrase. But cannot delete existing wallet on Ubuntu

I am new to Sia and installed the hosting client on Ubuntu. Due to an error I was not able to save the passphrase. Still even after deleting the folder and unpacking a new installation, it seems that the "old" wallet is still there and ask for a password.

How can I start a new hosting client and wallet from scratch?

In the latest version of Sia, you can fix this using the Terminal view. Use the command wallet init --force. This will delete your existing wallet and generate a new seed phrase. You should then be able to unlock the wallet with the new seed.
